If its bright sunlight and you use that sun to light up the subjects face, chances are they are squinting. So have the sun behind them and use the flash as fill. Otherwise, find a nice shady spot and either use flash or not depending on the light on the subjects face. Keep your shutter speed around 1/250 sec and aperature at around f8. Juggle the ISO so the exposure is good but dont go beyond ISO 800. If you use Priority settings aperture is the best one to go with, but if light is poor and you dont have a tripod then Id use shutter priority so you have the shutter speed that will give you the sharpest image.

If you are outdoors and it's not overcast outside, find some shade and eliminate the shadows.

I guess what i'm wanting to know, is what would you use when your in full sunlight taking
a portrait? (say in the middle of a football field) I'm not worried too much about the action shots just yet. Just the posed ones.

Also do you use a flash all the time?[/QUOTE]

Maybe try base iso 100 or 200, a 1.8/50 lens on a crop sensor dslr at f2.8 or 3.5, a two stop ND neutral density filter. A minimum shutter speed of 1/125 ideally 1/250 or faster. Focus point on the eyes.

For fill flash, note the actual shutter speed the camera selects for you using an aperture of f2.8 or f3,5, then switch to manual and dial in that shutter speed, but stop down 1 or 2 stops (eg f4.5 or f6.3) to limit the flash and bracket a couple of shots to test results. i.e take a shot with fill at f4.5 and another at f6,3. With flash, aperture controls flash power and shutter speed controls ambient daylight. Im assuming you want to control flash manually not TTL. If you have variable power capability with your flash you can experiment with the metered shutter spe3d for the scene ambient light and then shoot fill at reduced power with just less aperture sto down control eg f4 or f5.6. The ND filter is to allow you to use wider aperture in strong daylight for shallower depth of field.

As a general rule, make sure your shutter speed is higher than your effective focal length. For example, at 200mm use a 1/250 sec shutter speed or faster. This also means you can get away with slower shutter speeds when using a wide-angle lens - such as 1/20sec with an 18mm focal length
